BBQ Chicken Wrap: Quick 6 Ingredient Lunch or Dinner

HELLO easy BBQ chicken wrap! Whenever I have leftover chicken I am ALWAYS thinking of a quick meal to put together that keeps everyone full and happy. Try this crunchy, sweet and savory wrap. Serve warm or cold! If your looking for a quick way to make some chicken, check out Easy and Quick Oven Baked Chicken. Pair with your favorite chips or veggies! This wrap works great also with The Best Roasted Red Potatoes and Onions!

Alright lets get started on this chicken wrap!

So first, gather your ingredients.

Easy Chicken wrap

Easy 6 Ingredient BBQ Chicken Wraps

Makes 4 Wraps

Ingredients

  • 4 Burrito sized tortillas or wraps
  • 2 cups cooked chicken – shredded or diced mixed with your favorite BBQ sauce
  • BBQ sauce to mix with the chicken ( I used about 2/3 cup, but personal preference to how much sauce you like!)
  • 1 cup cheddar cheese – chopped or shredded
  • 2 bell peppers – chopped
  • 1 cup romaine or spinach – cut into strips

Instructions:

  1. In a small bowl, mix the cooked chicken with BBQ sauce.
  2. Place ½ cup of BBQ chicken in a line on the tortilla.
  3. Top with ¼ cup cheddar cheese.
  4. Layer roughly 1/3 cup chopped bell peppers and 1/4 cup romaine or spinach on top.
  5. Roll up the wrap, cut in half and enjoy!

Note: Depending on the size of the bell peppers you might have more or less than 1/3 cup per wrap, so just equally divide the chopped bell peppers into four servings .

Easy and Quick Oven Baked Chicken

It is SO nice to have cooked chicken breast for a quick meal with sides, on salad, for a sandwich, to use in another recipe, for tacos, quesadillas, with pasta, in a wrap, or another way. I could go for a while : ) . This chicken is not only fast to make, it is delicious with lots of flavor from seasonings and is versatile.

What you’ll need

Chicken breast, spices (I used oregano, basil, garlic powder, paprika, sea salt, and black pepper), and olive oil

First get those spices measured and mixed up

Coat the chicken with olive oil and then seasoning. Then pop on a parchment lined sheet and bake!

Bake until internal temp is 165 degrees.

Easy and Quick Oven Baked Chicken

Ingredients

  • 3-4 Chicken breasts
  • ½ tsp garlic powder
  • 1 tsp oregano
  • ½ tsp basil
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp paprika
  • 2 tbsp Extra virgin olive oil

Instructions;

  1. Preheat oven to 400 degrees
  2. Mix spices together in small dish
  3. Apply olive oil to chicken breast, then add spices, coating top and bottom evenly
  4. Place seasoned chicken breasts on a parchment paper lined baking sheet
  5. Cook for 21 – 27 minutes, with small pieces of chicken cooking faster and larger pieces taking longer. I use a digital meat thermometer to make sure the chicken is 165 before I allow it cool.
  6. Pair with your favorite sides.

Note: If I know I am making this chicken for dinner, I sometimes double this recipe so I have extra for cooking with and leftovers later in the week for other quick meals.

Oven Baked Nachos

Who doesn’t love a quick and easy weeknight or weekend dinner recipe that EVERYONE will like?! Give yourself 10 minute to preheat the oven while you get the ingredients ready to go, 8-10 minutes in the oven and dinner is ready. REALLY. 🙂

Ingredients needed are your favorite tortilla chips, bell pepper (any color), and a can of pinto/black beans.  Feel free use garnish like cilantro, salsa, avocado, or sour cream if desired! You can always add shredded chicken or another protein on top as well!

First layer the main ingredients: Chips, beans, chopped bell pepper, and cheese on parchment paper

Oven Baked Nachos

Ingredients:

  • 1 bag tortilla chips
  • 1 bell pepper, I prefer red, yellow or orange (chopped)
  • 1 can pinto or black beans, rinsed or drained
  • 2 cups Mexican cheese blend
  • optional garnishes: cilantro, salsa, avocado, sour cream

Instructions:

  1. Preheat oven to 400 degrees
  2. While the oven is preheating, wash and chop a bell pepper, rinse and drain the beans and get the cheese ready to layer.
  3. Line a baking sheet with parchment paper
  4. Make an even layer of tortilla chips on the pan (You might not use a whole bag)
  5. Layer beans, bell pepper and cheese on top
  6. Bake for 8-10 minutes or until cheese is melted and starting to brown, keep an eye on them while baking.
  7. Remove from oven, garnish with cilantro, salsa, avocado or sour cream and enjoy!

Chicken Enchilada Bake

My husband requests this often. It is that good. A quick, easy take on chicken enchiladas baked in the oven in layers.  This is my take on it, I’ve seen other recipes use refried beans but I love using whole black beans and frozen corn, which bakes in the oven and goes so well with the dish. You can make it vegetarian by omitting the chicken if desired.  My mouth is watering just typing about this recipe. Let’s get started.

1.Get your ingredients ready

2. Place sauce to bottom of pan, then place two tortilla pieces on top,

3. Layer tortilla pieces to the sides

4. And then the other side to form one solid layer of tortilla.

5.  Layer with 1/2 half cup of frozen corn and 1 cup of black beans (1/2 can)DSCF1681

6. Layer with chicken, cheese and 1/3 cup enchilada sauce

7. REPEAT to make another entire layer of tortilla, corn/beans, chicken/cheese and sauce.

8. Final layer is tortillas, enchilada sauce and then cheese

9. Cover with foil, made to a point to prevent the cheese from sticking to the foil

10. Bake for 30 minutes while covered with foil, remove foil and then bake for 5 more minutes. I always put the baking dish on a cookie sheet to catch anything as it bakes.

Chicken Enchilada Bake

Ingredients:

  • 1 cup frozen corn
  • 1 can black beans (15 0z) rinsed and drained
  • 1 can enchilada sauce (I like the red mild best but the green is great too)
  • 2 cooked medium chicken breasts, shredded or diced
  • 2 cups Mexican cheese
  • 6 Tortillas (small or large) – each cut in half
  • Optional to use for garnish: Cilantro, sour cream, avocado, salsa

Instructions:

  1. Preheat oven to 375.
  2. Using a square 9X9 pan, first place several spoonfuls of enchilada sauces to the bottom (6-8spoonfuls).
  3. Arrange tortillas (4 of the ½ pieces) overlapping to form a layer.
  4. Place ½ can of black beans (about 1 cup) and ½ cup frozen corn on top of tortillas.
  5. Arrange ½ of cooked shredded chicken and 1/2 cup cheese, followed by 1/3 cup enchilada sauce.
  6. Repeat layer 3,4, and 5  (So you have an additional tortilla layer, corn/bean, chicken/cheese and sauce layer).
  7. Last layer will be the last of the tortillas, rest of the enchilada sauce, and 1 cup of cheese.
  8. Bake for 30 minutes with foil made to a peak on a baking sheet.
  9. Remove foil and back for an additional 5-10 minutes.
  10. Remove from oven, let sit for 10 minutes, cut into pieces, garnish with cilantro, sour cream, or avocado if desired and enjoy!

Best Turkey Burger Recipe

Now that is getting warm out, I like to cook QUICK, TASTY, and EASY meals. Emphasis on QUICK. When it is nice out there’s so many things to do outside, plans with friends and family, and really just other things I want to do besides following LONG recipes. I use this recipe to get the most juicy and tasty turkey burger in minutes. I have been pinpointing the ratios of ingredients over the last few years and I found the best combo. The turkey burgers give me the satisfaction of a hamburger but not so heavy! I usually pair it with roasted vegetables, a sweet potato, or a side salad. Let me show you HOW EASY THIS is.

  1. Get your ingredients
Ground turkey, parmesan, and spices (oregano, salt and pepper)

2. Mix

I mix the ingredients right in the container

3. Form burgers

I form turkey burger patties on a separate plate

4. Cook over medium heat

I cook over medium heat after preheating the pan with oil

5. Add cheese

6. Pair with favorite toppings and a veggie side

Hope’s Tasty Turkey Burgers

Ingredients:

  • 1 lb ground turkey
  • 1/4 cup grated parmesan cheese (I use natural parmesan that is stored in fridge but any will work)
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 tbsp Oil for cooking (canola/olive oil or other cooking oil)

Instructions:

  1. Mix oregano, salt and pepper together in small dish.
  2. Mix spices with parmesan cheese and ground turkey, forming 4 patties
  3. Heat oil in a skillet over medium heat for 3 minutes (LETTING THE PAN HEAT UP IS KEY TO GET A GOLDEN BROWN)
  4. Add turkey burger patties to the hot pan, browning for 4 minutes, then flip to other side, all while the pan is uncovered (no lid).
  5. Cook for an additional 3-4 minutes, until other side is brown also and then flip the burgers one last time. Next, turn off the stove burner, cover with the lid and continue to let cook in pan with the burner off and for an additional 5 minutes.
  6. Then uncover the lid to add cheese and let sit another minute. Then top with your favorite burger toppings and enjoy!
